In short, hardness measures a steel’s resistance to deformation. For a knife, this translates to edge retention—how long it stays sharp under use.
The Rockwell Test (HRC) in a Nutshell:
The Rockwell C scale (HRC) is the standard test. A diamond tip is pressed into the steel with a specific force. The depth of the resulting indentation is measured and converted into an HRC number. A higher number means harder steel.
The Hardness Trade-Off:
Hardness isn’t everything. It’s a delicate balance:
High HRC (62+): Excellent edge retention, but can be more brittle and prone to chipping if used for heavy tasks.
Low HRC (55-58): Softer and more durable, but will dull faster. It’s less likely to chip and is easier to sharpen.
